I’m going to apologize in advance for this post — I commit two sins that I know of, at least.

1) I mention scones, but have only one cruddy photograph

2) I don’t have a recipe

Forgive me?  In advance?  Please?

All the other pictures, for some strange reason, have a huge Oso hair right in the middle of them.

That’s what I get for putting my food on the floor to take pictures of ’em, I guess.  The little purr beast seems to think that I put it there for him, and proceeds to shed all over them.

Yep, that’s it, and I can’t exactly grab another one for a new picture.

I ate two for lunch, Amor ate one, and I threw the rest away.  (Inferior baked goods aren’t worth keeping around the house.)

Question for you GF bakers out there — while these sorta held together, they were like sand when you bit into them.  For 2 cups of GF flour, I used 3/4 tsp guar gum.

Not enough?

They were also vegan (no eggs in the house), which probably didn’t help with the texture any.

How do I make my baked goods less crumbly and more…I dunno?  Spongey?  Solid?  (I can share the recipe, if anyone wants to tell me how to tinker with it to fix it!  The only reason I’m not sharing is because it’s a near-complete fail.)

Do you like scones?  What’s your favorite baked breakfast treat? I love scones, muffins, tarts, croissants…you name it, I love it.
