Evening!
I had a night full of delicious meals…and broke my daggum memory card.
Fail.
It was dying a couple days ago, but I was able to wrestle some life back into it. Somehow, I managed to crack it straight down the middle. When I try to insert it into the computer now, it doesn’t “catch”. If that makes sense at all? It’s not locking into place.
Well, imagine a large chocolate MIM topped with some frozen Nogurt pulsed with a banana in my food processor. I also ate tons of chocolate, grapes, and rice cakes with peanut butter and applesauce.
School starts tomorrow! Yikes. I think I figured out the whole lunch thing, too, but confound it! A picture would make things so much easier, no?
I’ll see about picking up a new memory card for the ol’ Nikon tomorrow while I’m out and about.
Wish me luck! I’m so nervous — I’m finally a full-time student, after a year and a half of pottering around, pretending to be going back to school.
Any other students out there starting school last week or this week? What’s your major? Mine’s psychology. Of course.

I know you’ll do wonderfully! What did you figure out for your lunch situation? I usually end up bringing a little container with a sammy and some fruit or something…along with a granola bar. Pretty boring. Need something more interesting.

Tentative lunch plan: quinoa with veggies (tomatoes, mushrooms, kale, and peas) and beans (probably chickpeas?), MIM with peanut butter, tons of fruit. Hopefully all that holds me over until 7 or 8, when I can eat again!

Ok, you must tell me what a MIM is. I’m guessing “muffin in minutes” or something? If that’s what it is, YOU MUST TELL ME how to make them!

Yep, a MIM = Muffin in a Minute. I make mine differently than everyone else, but the standard recipe is 3 tbs milled flaxseed, 1/4 tsp baking powder, cinnamon/sugar to taste, and one whole egg, nuke for a minute.
I use 3 tbs gluten free flour (peanut flour = teh yumness), 1/3 cup applesauce, cinnamon, 1/4 tsp baking powder, an egg, and cinnamon, vanilla, and spices to taste. Takes longer than a minute though, made that way — mine takes about two in the microwave.
They’re so good! I also like to add a tbs of cocoa powder to them to make them cakey.
